Fruitcake Slice Cookies
Yield: Makes 5-6 dozen.

Ingredients:

  • 1 cup mixed candied fruit, chopped
  • 2 1/4 cup flour, divided
  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 1 egg, beaten slightly
  • 1 tsp. vanilla extract
  • 1 cup pecan halves
  • 2 cups maraschino cherries, well drained and halved

Directions:

  1. In a bowl, toss candied fruit with 1/4 cup of flour until coated; set aside.
  2. In a large bowl, blend butter and sugar. Add egg and vanilla; mix well. Add remaining flour and mix well. Stir in pecans, cherries and candied fruit.
  3. Divide dough into thirds. Shape each into rolls, about 12 inches long; wrap in aluminum foil and place in refrigerator several hours, or overnight.
  4. Cut dough into 1/4-inch slices and place on ungreased cookie sheets.
  5. Bake at 325°F for 13-15 minutes. Cool on wire racks.
