Grilled Flatbread with Ricotta and Honey
Ingredients:
- 1 cup ricotta cheese, full-fat
- 1½ tbsp. olive oil divided
- 1 tsp. thyme
- ½ tbsp. fresh lemon juice
- ½ tsp. salt
- 2 9.5 oz. artisan style flatbread, 4 count
- 1/3 cup rough-cut olive mix
- 1-2 tbsp. roughly chopped fresh basil
- 2-3 tbsp. honey
Directions:
- Preheat grill to about 350 F.
- Meanwhile, add ricotta cheese, a half tablespoon of olive oil, thyme, lemon juice and salt to a blender or food processor and blend until smooth, about 30 seconds. Set aside.
- Brush remaining olive oil on both sides of flatbread. Grill flatbread for about 3 to 4 minutes on each side or until golden brown and crispy. A light char is OK.
- Top flatbread with ricotta cheese mix, olives, drizzle with honey and sprinkle chopped basil on top. Slice and serve immediately.
