Grilled Pineapple


  • 1/2 cup Malibu rum
  • 1 tsp. sugar
  • 1 pineapple peeled, cored & cut into 1/2-inch slices
  • 1 tsp. sugar
  • 1 cup whipped cream
  • 1/4 cup shredded coconut, toasted


  1. Combine the rum and sugar in a dish and whisk together until combined. Arrange the pineapple slices along the bottom of a 9-by-13-inch baking dish and pour the rum mixture over the pineapple. Let it soak for 2-6 hours, flipping the pineapple half way through to allow the rum to soak into both sides.
  2. Remove the pineapple from the rum mixture. Preheat the grill to medium-high.
  3. Lightly sear the pineapple directly over the heat for about 10 minutes, using tongs to turn once halfway through.
  4. Remove from grill and top with whipped cream and shredded coconut.
