Ingredients:
- 1 prepared pie crust
- 8 large eggs
- 1 cup bacon crumbles
- 1 cup sharp cheddar cheese
- 1 cup mozzarella cheese
- 1 cup jalapeño peppers
- ½ cup fresh spinach
- ¾ cup whole milk
- ¾ cup heavy cream
- 1 cup banana peppers
- 1/8 tsp. salt
- 1/8 tsp. pepper
Directions:
- Preheat oven to 350 F.
- In a large bowl, whisk together eggs. Add milk and cream and whisk until frothy, adding salt and pepper.
- Place the prepared pie crust on a pan and evenly scatter the cheese and bacon on the bottom. Evenly spread spinach and peppers over bacon and cheese.
- Gently pour egg and dairy mixture over filling, spreading it evenly throughout.
- Place in the oven and bake until puffed and golden brown, about 30 minutes. Test for doneness and add a few minutes if necessary until knife comes out clean.
