Homemade Pesto

Great for using garden fresh basil!

Ingredients:

  • 1/3 cup pine nuts, toasted
  • 1 Tbsp. lemon juice
  • 2 garlic cloves, smashed
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. red pepper flakes
  • 2 1/2 cups packed fresh basil leaves
  • 2/3 cup extra virgin olive oil
  • 1/2 cup grated Parmesan cheese

Directions:

  1. In a food processor, combine the pine nuts, lemon juice, garlic, salt, black pepper and red pepper flakes. Pulse until the pine nuts are finely chopped and the ingredients are well combined, scraping the sides of the processor bowl with a rubber spatula. Add the basil and pulse to combine. With the food processor running, slowly stream in the oil until well combined. Add the Parmesan cheese and pulse to combine.
  2. Can be stored in an airtight container for up to one week.
