Hummingbird Cake

Ingredients for the cake:

  • 3 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 cups sugar
  • 1 1/4 cups oil
  • 3 eggs
  • 1 tsp. vanilla
  • 1 8oz. can crushed pineapple, undrained
  • 3 small bananas, mashed
  • 1 cup pecans, chopped

Ingredients for the frosting:

  • 1 8oz. pkg. cream cheese
  • 1 16oz. box confectioners sugar
  • 1 tsp. vanilla
  • 1/2 cup butter
  • 1 cup chopped nuts

Directions:

  1. Cake: Sift together first 5 ingredients, add remaining ingredients and mix well. Bake in greased and floured tube pan for 65 minutes at 350°, or in 3 greased and floured 9″ round cake pans. Let cool at least 1 hour in pan before removing to frost.
  2. Frosting: Cream together the cream cheese and butter, add sugar. Beat until light, add vanilla and mix well. Spread on cake baked in tube pan. Double the frosting recipe if layering the three 9” round cakes. Top with nuts.
