Lamb Meatballs

Ingredients:

  • 1 lb. ground lamb
  • 1 small onion, grated
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, crushed
  • 1/4 cup mixed coriander/cilantro leaves, finely chopped
  • 1 1/2 tsp. EACH cumin, coriander, paprika
  • 1/2 tsp. EACH cinnamon and cayenne pepper
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tbsp. olive oil

Directions:

  1. Place all ingredients in a bowl. Mix well with your hands. Measure out 1 heaped tablespoon, and then roll into balls. Repeat with the remaining mixture — you should have 20 to 24 meatballs.
  2. Heat oil in a large non-stick pan over medium heat. Add half the meatballs and cook, turning to brown all over, for 9 minutes, or until cooked through, 160 F.
  3. Transfer to a plate and serve with tzatziki sauce.
