- 6-8 small potatoes
- 1/4 cup milk
- 1 tablespoon butter
- Salt and pepper
- 1/2 cup or less Cheddar cheese, shredded
Scrub and wash potatoes as many as desired. Pierce each several times with a fork. Place in a baking pan and bake at 350° for 20-30 minutes until potatoes are tender. Take out of oven and allow to cool. When cool enough to handle with your hands, slice top of potato off and scoop out inside potato with a spoon. Make sure to leave potato skin intact. In mixing bowl, mash potatoes with 1/4 cup milk and 1 tablespoon butter. If needed, add more milk one tablespoon at a time. Add in cheese as much as desired. Sprinkle with salt and pepper. Stir until well blended. Refill each potato shell with mashed potato mixture. Reheat in the oven 15-20 minutes.
