Pumpkin Pie Cake

Reader’s Recipe: D. Flinner of Canton, OH

Ingredients:

  • 1 (29 oz.) can pumpkin
  • 1 (13 oz.) can evaporated milk
  • 4 eggs
  • 1 1/2 cup sugar
  • 1 1/2 teaspoon pumpkin pie spice
  • 1 yellow cake mix
  • 1 cup melted butter
  • 1 cup chopped walnuts or pecans
  • 1/4 cup brown sugar
  • whipped topping or ice cream

Directions:

  1. Beat first 5 ingredients together.
  2. Pour into 9″x13″x2″ pan.
  3. Sprinkle all of dry cake mix over pumpkin mixture.
  4. Pour melted butter over top evenly.
  5. Sprinkle brown sugar and nuts over top of cake.
  6. Bake at 350 degrees 1 hour or longer for a crispy topping.
  7. Serve warm or cold with whipped topping or ice cream.
