Pumpkin Walnut Bread

Ingredients:

  • 2 eggs
  • 1 cup brown sugar
  • 1/2 cup oil
  • 1/3 cup water
  • 1 can pumpkin puree (15-oz.)
  • 1 3/4 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 cup chopped walnuts

Topping:

  • 1 Tbsp. butter (not margarine)
  • 1/4 cup brown sugar
  • 3 Tbsp. milk
  • 1/4 cup chopped walnuts

Directions:

  1. In a mixing bowl, beat eggs and add brown sugar, oil, water and pumpkin puree.
  2. In separate bowl, combine rest of bread ingredients (except nuts). Add egg mixture and walnuts, and combine until just blended. Do not over mix.
  3. Pour into greased and floured 8.5 x 4.5” loaf pan. Bake at 325° for 55-60 minutes.
  4. To make the topping: Combine butter, brown sugar and milk in a small saucepan. Boil mixture for just 2 minutes, stirring constantly. Drizzle top of loaf and sprinkle with chopped walnuts, pressing lightly into loaf.
  5. Cool completely; wrap in plastic wrap before serving.
