- 1 large potato
- 2 tablespoons honey
- 1 cup whole wheat flour
- 1 cup unbleached flour
- 2 1/2 teaspoons baking soda
- 1 teaspoon cream of tartar
- 3/4 rolled oats
- 1/2 raisins
Peel and slice potato. Place in 1 quart saucepan with water to cover and cook until tender. Drain, reserving 3/4 cup of potato water. Mash potato.
In small bowl, combine 1/2 cup mashed potato, honey and reserved potato water.
Sift whole wheat flour, unbleached flour, baking soda and cream of tartar into large bowl. Stir in oats and raisins.
Make well in center of dry ingredients and pour in potato mixture. Stir until stiff dough forms. Turn out onto floured board and knead 1 minute with floured hands. Shape into ball.
Coat 8-inch round cake pan with nonstick spray. Add dough and flatten slightly. With sharp knife, make cross slash in top of loaf.
Bake at 375° 25 to 35 minutes, or until loaf sounds hollow when tapped. Cool completely before serving.
