Spinach Peach Salad with Almonds

Dressing Ingredients:

  • ¼ cup oil (avocado or extra virgin olive oil)
  • 2 tbsp. honey
  • 2 tbsp. white vinegar
  • ½ tsp. salt
  • Dash ground black pepper
  • Dash hot sauce

Salad Ingredients:

  • ¼ cup sliced toasted almonds
  • 2 fresh peaches, halved and grilled
  • 8-10 cups fresh baby spinach

Directions:

  1. In a jar or small bowl, combine dressing ingredients. Whisk to combine. The dressing will separate as it sits. Just shake or whisk again right before serving.
  2. Heat a dry skillet over medium-high heat. Add ¼ cup sliced almonds and shake the pan in circular motions to toast evenly, 3 to 4 minutes. Watch closely so they don’t burn. Once golden and fragrant, transfer to a plate to cool.
  3. In a large bowl, combine 16 ounces fresh spinach, peaches and toasted almonds. Add dressing to taste and toss to coat the spinach evenly.
  4. Serve immediately. For a hearty salad, add cooked pork or chicken.
