- 4 (10 oz.) pkgs. spinach, cleaned
- 1 (6 ozs.) crumbled feta cheese
- 1/2 chopped canned pitted olives
- 2 tablespoons extra-virgin olive oil
- salt and pepper to taste
Poke a few wholes in spinach bags and microwave on high (2 at a time) 4 minutes, until spinach is wilted; drain. While spinach is cooking, toss feta, chopped olives and olive oil in serving bowl; add spinach and toss to coat. Season with salt and pepper.
