Sweet Potato Casserole



  • Canned (40 oz) sweet potatoes, drained
  • 2 eggs
  • 1/4 cup sugar
  • 3/4 cup evaporated milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 tablespoons margarine, melted
  • 1/4 cup brown sugar
  • 1/4 cup chopped walnuts, optional
  • Directions

    Preheat oven to 350°. Spray 1-quart casserole dish with cooking spray. In a large bowl, combine sweet potatoes and eggs and mash with an electric mixer. Add sugar, milk, salt, nutmeg and margarine and mix well. Spoon into casserole and top with brown sugar and nuts. Bake for 45 to 55 minutes or until set.
