Valentine?s Day Red Cake

Ingredients

  • ½ cup butter
  • 1 ½ cups sugar
  • 2 medium eggs
  • 2 T. hot coffee
  • 2 T. cocoa
  • 1 tsp. red food coloring
  • 1 tsp. baking soda
  • 1 cup buttermilk
  • 2 cups flour
  • 1 tsp. salt
  • Frosting (your choice)

Directions

Preheat oven to 325°. Cream butter; then add sugar, beating thoroughly.
Add eggs and beat well. Combine coffee, cocoa and red food coloring; add to creamed mixture and beat. Dissolve baking soda in buttermilk, stirring thoroughly. Combine flour and salt; then add to creamed mixture alternately with buttermilk mixture. Pour batter into two greased and floured eight-inch round cake pans. Bake for 35-40 minutes. Allow to cool in pans for 15 minutes. Remove from pans and allow to fully cool. Spread frosting between layers and on top of cake.
