Whole 30 Greek Style Couscous

  • 1 box pearled couscous mix, garlic and olive oil flavored
  • 1 English cucumber, coarsely chopped
  • 3 bell peppers: 1 red, 1 green, 1 yellow, coarsely chopped
  • 1/2 large red onion, coarsely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup flat-leaved parsley, finely chopped
  • 2 cans chickpeas, drained
  • 1 cup Feta cheese
  • 1 lemon, cut into wedges

Salad Dressing Ingredients:

  • 1/4 red wine vinegar
  • 1/2 cup olive oil
  • 1 Tbsp. lemon juice
  • 1 tsp. minced garlic
  • 1 tsp. dried oregano
  • 1/2 tsp. dijon mustard
  • To taste salt and pepper


  1. Prepare couscous according to the package and cool.
  2. Mix chopped veggies in a bowl with the drained chickpeas and Feta. Add cooled couscous.
  3. Prepare dressing ingredients in a mason jar and seal the jar. Shake until combined. Add dressing if preparing a salad or when you’re ready to eat.
  4. Garnish with lemon wedge.
