- 8 chicken breast halves, skinned
- 1 lb. fresh mushrooms, halved
- 1 dry white wine
- 1/3 fresh parsley, chopped
- 2 tablespoons fresh tarragon, minced (or 1 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Preheat oven to 350°. Arrange chicken breasts, bone side down, in a 13 X 9 inch baking dish. Place mushrooms around chicken, pour wine over everything and sprinkle with parsley, tarragon, salt, and pepper. Cover and bake at 350° for 50 to 60 minutes or until done. Serves 8.
