Zucchini Chips



  • 2 large zucchini (24–28 ounces)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • Directions

    Preheat oven to 400°. Coat 2 baking sheets with cooking spray. Thinly slice zucchini on the diagonal, about 1/8? thick. Place slices in large bowl and toss well with oil, salt, and garlic powder (if using). Arrange in a single layer on baking sheets. Bake, turning often, for 25 minutes. Reduce oven temperature to 300° and bake until splotchy brown and crisp, 10 to 15 minutes. Remove to paper towels and let cool. These will keep at room temperature, uncovered, for several hours.
