Fall Breakfast Scramble Hash
Ingredients:
- 1/2 cup quartered baby potatoes
- 1/2 cup sweet potatoes, diced in 1/2-inch pieces
- 1 1/2 tbsp. olive oil
- To taste salt, pepper, garlic powder and chili powder
- 1/2 cup quartered white mushrooms
- 1/2 cup sliced zucchini
- 1/3 cup broccoli sprouts
- 2 eggs
Directions:
- Preheat oven to 375 F.
- Toss potatoes and sweet potatoes with 1/2 tablespoon of olive oil and season with salt, pepper, garlic powder and chili powder. Put on a baking tray and cook in the oven for 15 minutes, stirring every 5 minutes.
- Add in the zucchini and mushrooms; mix in another 1/2 tablespoon of olive oil and mix well with the potatoes and sweet potatoes. Roast for another 5 to 10 minutes. Make sure the veggies have nice caramelization.
- Take out the roasted veggies and plate. Finish with two eggs prepared the way you like.
