Street Corn Queso

Ingredients:

  • 330 oz. canned or frozen yellow corn
  • 332 oz. Velveeta Queso Blanco, cubed
  • 37 oz. pepper jack cheese, cubed
  • 32 cups milk
  • 31/2 onion, diced
  • 314 oz. canned green chiles
  • 32 limes, juiced
  • 31 packet of Street Corn Seasoning
  • 31 bunch cilantro, chopped, reserve a few sprigs for garnish
  • 34 oz. Cotija cheese, crumbled
  • 31 bag of tortilla chips

Directions:

  1. Preheat the oven 325 F.
  2. Combine all ingredients in a baking pan or large cast iron skillet.
  3. Bake for 30 minutes, stirring every 10 minutes until the queso is fully melted.
  4. Remove from the oven and top with reserved cilantro and crumbled Cotija cheese.
  5. Serve immediately with tortilla chips.
