Ingredients:
- 330 oz. canned or frozen yellow corn
- 332 oz. Velveeta Queso Blanco, cubed
- 37 oz. pepper jack cheese, cubed
- 32 cups milk
- 31/2 onion, diced
- 314 oz. canned green chiles
- 32 limes, juiced
- 31 packet of Street Corn Seasoning
- 31 bunch cilantro, chopped, reserve a few sprigs for garnish
- 34 oz. Cotija cheese, crumbled
- 31 bag of tortilla chips
Directions:
- Preheat the oven 325 F.
- Combine all ingredients in a baking pan or large cast iron skillet.
- Bake for 30 minutes, stirring every 10 minutes until the queso is fully melted.
- Remove from the oven and top with reserved cilantro and crumbled Cotija cheese.
- Serve immediately with tortilla chips.
