Apple Coffee Cake

Ingredients:

  • 5 apples, cored and chopped
  • 2/3 cup sugar
  • 1 cup dark raisins
  • 1/2 cup pecans, chopped
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 egg, beaten
  • 1 cup skim milk
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon

Directions:

  1. Preheat oven to 350°.
  2. Grease a 13-by 9-inch baking pan.
  3. In large mixing bowl, combine apples with sugar, raisins, and pecans.
  4. Let stand for 30 minutes.
  5. Stir in remaining ingredients, mixing just enough to moisten dry ingredients.
  6. Turn batter into pan.
  7. Bake for 35-40 minutes.
  8. Cool cake slightly before serving.
