Fried Chicken



  • 1 teaspoon paprika
  • 1/2 teaspoon ground thyme
  • 1 teaspoon garlic powder
  • 1/2 cup bread crumbs
  • 1/2 cup plain nonfat yogurt
  • 10 oz. boneless skinless chicken breasts
  • Directions

    Preheat oven to 350° and prepare a baking pan with nonstick cooking spray. Trim fat off chicken, cut into 4 equal pieces and marinade them in yogurt for several minutes. In bowl, mix together bread crumbs, paprika, thyme, and garlic. Dredge chicken in crumb mixture and arrange on prepared pan. Bake for 20 minutes; watch closely to ensure that the chicken coating does not burn. (If you want to give the chicken a deep golden color, place the pan under a broiler for the last 5 minutes of cooking.) Makes 4 servings.
