Fried Green Tomatoes

Ingredients:

  • 4 firm green tomatoes
  • 1/2 cup all-purpose flour
  • 1 t. salt
  • 1/4 t. pepper
  • a pinch of cayenne pepper
  • 2 eggs
  • 1/2 tsp of hot sauce
  • 1/3 cup butter

Directions:

  1. Wash tomatoes, pat dry.
  2. Remove stem and core.
  3. Slice tomatoes 1/4″ thick., Lay tomato slices on paper towel, salt each side, cover with another paper towel and let sweat for 15 minutes.
  4. Meanwhile, mix flour, salt, pepper and cayenne pepper in a pie pan. In a second pie pan, beat eggs and hot sauce.
  5. Pat the sweated tomato slices dry. Dip tomato slices in the flour mixture, then the egg mixture, then the flour mixture.
  6. Heat butter in a 10″ skillet until melted.
  7. Add tomato slices; cook turning only once until golden brown.
