Ingredients:
- 4 firm green tomatoes
- 1/2 cup all-purpose flour
- 1 t. salt
- 1/4 t. pepper
- a pinch of cayenne pepper
- 2 eggs
- 1/2 tsp of hot sauce
- 1/3 cup butter
Directions:
- Wash tomatoes, pat dry.
- Remove stem and core.
- Slice tomatoes 1/4″ thick., Lay tomato slices on paper towel, salt each side, cover with another paper towel and let sweat for 15 minutes.
- Meanwhile, mix flour, salt, pepper and cayenne pepper in a pie pan. In a second pie pan, beat eggs and hot sauce.
- Pat the sweated tomato slices dry. Dip tomato slices in the flour mixture, then the egg mixture, then the flour mixture.
- Heat butter in a 10″ skillet until melted.
- Add tomato slices; cook turning only once until golden brown.
