Peanut Butter Truffle Cake

Ingredients for Cake:

  • 1 ¾ cup flour
  • 2 cups sugar
  • ¾ cup cocoa
  • 2 eggs
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla
  • 1 cup boiling water

Ingredients for Frosting:

  • 1 cup butter
  • 1 cup peanut butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla
  • ¼ cup milk

Ingredients for Ganache:

  • 1 cup heavy cream
  • 1 cup milk chocolate chips

Directions:

  1. Heat oven to 350 degrees. Grease and lightly flour 3-8 inch pans.
  2. Stir together sugar, flour, cocoa, baking soda, baking powder and salt.
  3. Add eggs, milk, oil and vanilla. Beat for two minutes and add boiling water.
  4. Pour into pans. Bake for 25-30 minutes or until done.
  5. For Frosting, cream peanut butter and butter. Add remaining fosting ingredients and beat until smooth. Spread between layers of cooled cake.
  6. For the Ganache, Bring to boil the heavy cream and pour over one cup milk chocolate chips. Melt and pour over chocolate cake.
  7. Garnish with hand dipped peanut butter truffles.
