Slow Cooker Asian Chicken Noodles

Ingredients:

  • 1 bottle sweet chili, Asian or Thai sauce
  • 1 1/2 lbs. skinless, boneless chicken thighs
  • 1 pkg. fresh lo mein noodles
  • 1 pkg. frozen mixed vegetables, cooked
  • 1 bunch green onions, sliced, for garnish

Directions:

  1. Place chicken thighs into a slow cooker. Pour the sauce over the chicken and cover. Cook on low until chicken is very tender, about 3 hours. Use two forks to shred chicken into large chunks.
  2. Bring a large pot of salted water to a boil; add noodles and cook until tender. Drain.
  3. Place prepared noodles into the crockpot with chicken and toss until well combined.
  4. Add cooked vegetables. Warm for 15 additional minutes. Top with green onions and serve.
