Slow Cooker Asian Chicken Noodles
Ingredients:
- 1 bottle sweet chili, Asian or Thai sauce
- 1 1/2 lbs. skinless, boneless chicken thighs
- 1 pkg. fresh lo mein noodles
- 1 pkg. frozen mixed vegetables, cooked
- 1 bunch green onions, sliced, for garnish
Directions:
- Place chicken thighs into a slow cooker. Pour the sauce over the chicken and cover. Cook on low until chicken is very tender, about 3 hours. Use two forks to shred chicken into large chunks.
- Bring a large pot of salted water to a boil; add noodles and cook until tender. Drain.
- Place prepared noodles into the crockpot with chicken and toss until well combined.
- Add cooked vegetables. Warm for 15 additional minutes. Top with green onions and serve.
