Summer Peach Cake

Ingredients:

  • 1-1/4 cup flour
  • 3/4 cup sugar
  • 1/4 tsp. salt
  • 1-1/4 tsp. baking powder
  • 4 Tbsp. butter, melted
  • 1/2 cup milk
  • 1 egg, beaten
  • 1 tsp. vanilla

Toppings:

  • 2 cups peaches
  • 2 Tbsp. butter, melted
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon

Directions:

  1. Sift flour, sugar, salt and baking powder together in a mixing bowl, then add butter, milk, beaten egg and vanilla; beat well for 2 minutes.
  2. Pour mixture into a greased and floured 9”x9”x2” pan and set aside.
  3. Mix all ingredients for topping well and pour over cake mixture. Sprinkle with a bit of cinnamon.
  4. Bake at 350° for 35 to 40 minutes. Serve warm with ice cream.
