Baked Meatballs

Perfect for sandwiches, pasta or on their own!

Ingredients:

  • 1 lb. 80% lean ground beef
  • 1 lb. ground pork
  • 2 large eggs, beaten
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onion
  • 1 level tbsp. minced garlic
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. ground black pepper

Directions:

  1. Preheat oven to 400 F. Line a baking sheet with foil and spray with nonstick cooking spray.
  2. In a large bowl, combine the meat, egg, breadcrumbs, cheese, onion, garlic, salt and pepper.
  3. Use a medium cookie scoop to scoop meat mixture. Form into balls and place on the baking sheet.
  4. Bake uncovered for 17 to 20 minutes or until the center is no longer pink. Turn halfway through, so the bottoms don’t brown.
