Grandma Vahalik’s Cauliflower Salad
Ingredients:
- 1 head iceberg lettuce, cleaned and chopped
- 1 head cauliflower, chopped
- 1 lb. bacon, cooked and chopped
- 1 medium onion, chopped
- 1 cup mayonnaise
- 1/4 cup sugar
- 1 tbsp. apple cider vinegar
- 1/2 cup grated Parmesan shaker cheese, divided
- Optional rotisserie chicken pieces
Directions:
- In a large bowl, combine lettuce, cauliflower, bacon and onion. Set aside.
- In a small bowl, combine mayonnaise, sugar and vinegar with cheese. Stir well until fully mixed. Add dressing to the salad mixture.
- Refrigerate two hours, or up to five hours, before serving.
- Add chicken if desired for main entree or without for a side dish.
