Grandma Vahalik’s Cauliflower Salad

Ingredients:

  • 1 head iceberg lettuce, cleaned and chopped
  • 1 head cauliflower, chopped
  • 1 lb. bacon, cooked and chopped
  • 1 medium onion, chopped
  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 1 tbsp. apple cider vinegar
  • 1/2 cup grated Parmesan shaker cheese, divided
  • Optional rotisserie chicken pieces

Directions:

  1. In a large bowl, combine lettuce, cauliflower, bacon and onion. Set aside.
  2. In a small bowl, combine mayonnaise, sugar and vinegar with cheese. Stir well until fully mixed. Add dressing to the salad mixture.
  3. Refrigerate two hours, or up to five hours, before serving.
  4. Add chicken if desired for main entree or without for a side dish.
