Artichoke Stuffed Mushrooms

Ingredients:

  • 1 1⁄2 lbs. fresh large mushrooms
  • 1⁄4 cup chopped onion
  • 1 tbsp. olive oil
  • 1⁄4 cup dry white wine
  • 1⁄4 cup soft breadcrumbs
  • 14 oz. can artichoke hearts, drained and chopped
  • 3 green onions, chopped
  • 2 garlic cloves, minced
  • 1⁄2 cup Parmesan cheese
  • 1⁄2 cup mayonnaise
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. pepper

Directions:

  1. Rinse the mushrooms and pat them dry. Remove stems and chop; reserve caps.
  2. Sauté mushroom stems, onion and garlic in oil, in a large skillet over medium heat for 5 minutes.
  3. Add wine and cook 2 minutes till liquid evaporates. Stir in crumbs. Remove from heat and let cool.
  4. Combine onion mixture, artichokes and the next five ingredients. Spoon 1 teaspoonful into each cap.
  5. Place on lightly greased rack in a roasting pan.
  6. Bake at 350 F for 12 to 15 minutes or till golden.
