- 1 eggplant
- 3 onions
- 3 tomatoes
- 2 cloves garlic
- 1 green pepper
- 4 Tbsp. melted butter
- salt and pepper
- Peel and slice thin the eggplant, onion, pepper and tomatoes.
- Place in layers in a buttered baking dish, seasoning with salt and pepper, and pour melted butter over all.
- Bake in a moderate oven until tender.
