Banana Cookies

Ingredients:

  • 3 ripe bananas
  • 2 cups quick-cooking oats
  • 1 cup dates, chopped and pitted
  • 1/4 cup slivered almonds
  • 1/3 cup vegetable oil
  • 1 tsp. vanilla

Directions:

  1. Preheat oven to 350°. In a large bowl, mash the bananas.
  2. Stir in oats, dates, almonds, oil, and vanilla. Mix well, and allow to sit for 15 minutes.
  3. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 20 minutes, or until lightly brown.
