Zucchini Casserole

Ingredients:

  • 4 cups unpeeled zucchini, chopped
  • 1/4 cup chopped onion
  • 1 small box cornbread mix
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup grated cheddar cheese

Directions:

  1. Preheat oven to 325 degrees.
  2. Combine all ingredients (less 1/2 cup cheddar cheese) and stir well. Pour into a greased 8-inch pan. Bake for 45 minutes.
  3. Sprinkle the second 1/2 cup grated cheddar cheese on top and bake an additional 15 minutes.
