Lemon-Pineapple Pie with meringue

Ingredients:

  • 1 1/3 cups sugar
  • 1/2 cup boiling water
  • 1 Tbsp. butter
  • 1/2 cup lemon juice
  • 1/4 tsp. salt
  • 1 Tbsp. cornstarch
  • 1/2 cup pineapple juice
  • 2 egg yolks, beaten
  • grated rind of 1/2 a lemon
  • 2/3 cup crushed pineapple

Ingredients for Meringue:

  • 2 egg whites
  • 1 tsp. vanilla
  • 6 Tbsp. fruit sugar

Directions:

  1. Mix sugar and cornstarch; gradually add the water and pineapple juice which have been heated together. Stir constantly until mixture boils, cook for 5 minutes.
  2. Add egg yolks, salt, lemon juice and rind, butter and pineapple and cook until mixture thickens. Cool, turn into a baked pastry shell and cover with meringue.
  3. For the meringue: Beat egg whites until slightly foamed. Add vanilla and beat until stiff. Add fruit sugar, beating after each spoonful. Spread meringue over cooled pie and brown in moderate oven.
