Pecan Nut and Maple Syrup Ice Cream



    • 4 oz. pecan nuts chopped
    • 2 oz. butter
    • 2 tablespoons brown sugar
    • 2 tablespoons maple syrup
    • 3/4 pint milk
    • 3/4 pint double/heavy cream


Using frying pan, slowly melt butter then add chopped pecan nuts. Sprinkle on sugar, stir and cook on medium heat for approx 3-4 minutes until nuts are crisp. (Cooking on too high a heat will burn the pecan nuts and render a bitter taste.) Remove from pan and place to one side to cool. In separate mixing bowl, pour in milk, stir in cream, then add pecan nuts. Still stirring, add maple syrup until blended in. Transfer complete mixture into ice cream maker and follow manufacturer’s instructions.
