Pineapple Upside-Down French Toast

Ingredients:

  • 2 tbsp. butter
  • 1⁄4 cup brown sugar, packed
  • 4 slices canned pineapple, well drained
  • 4 maraschino cherries
  • 2 eggs
  • 1⁄2 cup milk
  • 1⁄8 tsp. salt
  • 4 slices white bread

Directions:

  1. Melt butter in a 9-inch square pan in the oven as it preheats. Sprinkle with brown sugar. Lay pineapple slices over brown sugar, spacing evenly. Place a cherry in each pineapple ring.
  2. Beat eggs, milk and salt until blended. Soak four bread slices in milk mixture until soft, using all of the mixture.
  3. Arrange bread on top and pour extra milk mixture over the bread.
  4. Bake at 400 F for 25 minutes or until set and lightly browned. Invert the entire pan onto a large serving platter. Serve immediately.
