Spicy Oatmeal Cake

This cake was used for our wedding in 1970.

Ingredients:

  • 3 C. boiling water
  • 2 C. quick oats 
  • 1 C. butter 
  • 4 eggs, beaten
  • 2 C. brown sugar
  •  1 tsp. salt 
  • 3 C. flour
  • 2 C. white sugar
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp.nutmeg

Directions:

  1. Bring water to boil, stir in oatmeal and butteruntil butter is melted. Cover, let stand 5 min.
  2. Beat eggs.  Gradually add brown sugar until smooth.
  3. Sift together remaining ingredients and add to egg mixture.  Blend thoroughly.
  4. Bake in greased, floured pan for 35 min at 350 degrees until knife comes out clean. NOTE: Use only butter cream frosting.
