- 2 packages frozen chopped spinach, cooked and drained
- 3/4 cup butter (1 1/2 sticks), softened
- 1 large onion, chopped
- 4 eggs, beaten
- 1/4 teaspoon garlic powder
- 1/2 cup Parmesan cheese
- 2 cups dry stuffing mix
- Preheat oven to 350˚F. Spray cookie sheet. Mix cooked spinach with remaining ingredients. Refrigerate for ½ hour. Form into balls and bake for 10-12 minutes.
