Strawberry Salsa

Ingredients

  • 1/3 cup apricot jam
  • 1 teaspoon cinnamon
  • 1 lb. fresh strawberries, quartered and diced
  • 1/2 lb. raspberries, finely chopped
  • 1 cup of diced kiwi, finely chopped
  • 2 granny smith apples, finely chopped
  • 1 lemon

Directions

In medium bowl whisk jam, lemon juice and cinnamon. Add strawberries, raspberries, apples, and kiwi; toss gently to combine. Serve salsa over pancakes, waffles, hot cereal, mix into plain yogurt or pair with cinnamon tortilla chips.

Note: To make the cinnamon tortilla chips. Preheat oven to 350 degrees. Combine cinnamon & sugar. Set aside. Working with 3 tortillas at a time, spray both sides of of the tortilla and sprinkle each side lightly with cinnamon sugar. Stack 3 tortillas and using a pizza cutter, cut tortillas into 12 wedges. Place on a baking sheet and bake 8-11 minutes or until crisp.
