Roasting garlic is one of those kitchen skills you don’t think you need until a recipe calls for it. Roasted garlic can be used in many recipes, from dips and dressings to mashed potatoes and chicken.

What you’ll need
- 1 garlic bulb
- 1 tablespoon extra virgin olive oil
- Small frying pan
- Spatula or wooden spoon
How to roast garlic on the stovetop
- Break open a bulb of garlic to separate the cloves. Do not peel. The outer layer may come off as you separate the cloves, and that’s ok.
- Pour about 1 tablespoon of extra virgin olive oil into a small frying pan. Make sure oil is evenly distributed on pan.
- Turn burner to medium heat.
- Add garlic cloves to frying pan.
- Watch carefully as cloves roast, stirring occasionally with a spatula or wooden spoon and making sure garlic is roasted evenly. The cloves can quickly burn.
- Once cloves are browned (about 10 minutes), remove from heat.
- When garlic is cool, peel the cloves.
