Ingredients:
- 1 tablespoon olive oil
- 2 lb. ground mild Italian pork sausage
- 2 onion, finely diced
- 6 cloves garlic, minced
- 4 medium russet potatoes, peeled and cubed
- 12 cups chicken broth
- 4-5 cups of baby spinach
- 1 1/2 cups heavy cream
- salt and pepper to taste
Directions:
- Heat the oil in a large pot over medium high heat. Brown the sausage until fully cooked.
- Add the onions and garlic to the sausage. Sauté for 5-7 minutes until soft and fragrant. FYI your house will smell AMAZING.
- Add the potatoes and the broth. Simmer for 7-10 minutes, until the potatoes are tender. (Be careful not to let it go for too long, because the potatoes will start to get really soft.)
- Add the spinach and heavy cream. Simmer for 5 minutes until kale has wilted.
- Season with salt and pepper and serve.
